New York Style Cheese Cake
Crust
8oz. Pecan meal
8oz. Sugar
1/4 lb. Butter melted
cinnamon, to taste
Blend together and press into a 12" springform pan
Cheesecake
40 oz. Creamcheese, softened
1 3/4 c. Sugar
1 1/2 tsp. Orange peel
1 1/2 tsp. Lemon peel
1/4 tsp. Vanilla extract
3 Tbsp. Flour
5 Eggs
3 Egg yolks
Blend all ingredients together, except eggs, then add one egg at a time, beating after each egg. Then add eff yolks, one at a time, beating after each one. Pour into pan, place into another pan with hot water and bake at 300 degree for 70 minutes. Remove from oven and cool on a rack. Then refrigerate for about 8 hours before serving
