Rowie's Father's Home made Italian Sausage

Salt to taste
1/2 tsp.  Black fresh ground pepper corns t
1 tsp. Ground Coriander 
1 tsp. Crushed Fennel seed 
1/10 tsp. Red Pepper
1 Ib. Pork coursely ground once

Mix and Stuff casings

Rowie's Father's Chicken in wine sauce

1 Chicken cut up in pieces
1/2 stick of Butter
3 Cloves chopped Garlic
Chopped Parsley
Rosemary (small pieces)
Salt
Milk
1 cup Dry of Cocktail Sherry

Roll chicken in flour on all sides, rub Rosemary on chicken
sprinkle with salt and add parsley.
Brown chicken on both sides (about 5 minutes each side, then add Sherry and steam for about 4 to 6 minutes on low to medium heat.
After 6 minutes add enough water to cover 1/4th to 1/3rd of the chicken pieces, then simmer with the lid on for about 1 hour.
(Making sure there is always some water in the pan).
Once the chicken is cooked, slow down the heat and Slowly add
regular milk to chicken until it is the proper thickness that you like.

Make rice or pasta to go with it. You can put the sauce on it.


Note:
You can modify this recipe by changing Sherry for Burgandy or any red wine. This makes the sauce darker and another unique flavor
