Rowie's Mother's Cheese Cake
2 cups finely ground Zwieback cookie crumbs
1 1/2 cups Grandulated Sugar
1 1/2 tsp. Cinnamon
1/2 cup Butter melted
4 Eggs
1/4 cup Walnuts chopped
1 1/2 tbs. Lemon juice
1/8 tsp. salt
1 cup Light Cream
3 cups Cottage Cheese
1/4 cup Flour
2 tsp. grated Lemon peel
Combine crumbs, 1/2cup sugar, cinnamon, and butter. reserve 3/4 cups of mixture. Press to the sides and bottom of pan.
Lightly beat eggs, while beating add 1 cup sugar slowly, then add Lemon juice, cottage cheese, cream and flour. Beat with an electric or hand beater until blended. Now strain through a fine sieve, add lemon rind.
Pour into pan and sprinkle top with balance of crumb mixture then nuts.
Bake at 350 degrees for about 1 hour, then turn off oven and open (ajar)oven door and let cool while in the oven for another hour.
